Rendered beef fat. It is the traditional cooking fat people used for generations before industrial seed oils. Ours is 100% beef tallow with nothing added.
Instead of pouring hot tallow into a tub and letting it cool slowly, votation chills it quickly and gently works it as it sets. That makes smaller, more even crystals for a smoother, creamier, more consistent scoop. It is not an additive. It is still 100% pure beef tallow, and like any tallow it can still melt in high heat.
It is rendered in the USA from American beef, USDA inspected, and distributed by Farmer Bob's from Princeton, Kansas. We don't raise the cattle ourselves. We sell it farmer-direct, with no food conglomerate in between.
